Spiced chicken tikka thighs with minted cucumber yogurt and pickled red onions all served up in a crusty ciabatta bread.
Ingredients
4 Chicken thighs skinless and boneless
4 tbsp Spice mix (see recipe below)
2 tbsp Olive oil
for the dressing
8 tbsp Greek yogurt
1/2 Garlic clove chopped
1 tbsp Dried mint
1/4 Cucumber
1 Red onion
1 lemon
1 Ciabatta loaf
Here's how
To make the dry spice mix:
1 tsp ground coriander
1 tsp ground cumin
1 tsp garamasala
1 tsp ground ginger
1 tsp paprika
2 tsp turmeric
1 tsp salt
1 tsp ground pepper
1/2 tsp chilli powder
2 tsp garlic powder
1 tsp onion powder
This spice will make twice the amount needs so its perfect for keeping in a Home Made preserving jar and putting in the cupboard for next time.
