KFC Style Salmon
KFC style salmon is a recipe inspired by the famous chicken takeaway, but using salmon for a great alternative. Salmon can take on big flavours. I just love serving this up with pickled red onions and sour cream. It’s a killer combination and makes for a nice change and a good way to get the kids onto fish instead of chicken. Serves 4
Ingredients 4 6oz pieces of salmon fillet 8 small soft tortilla wraps 100ml sour cream 2 limes 1 red onion sliced 200g pea shoots or rocket leaf For the salmon: 50g plain flour 100g panko breadcrumbs 2 tsp salt 1 tsp dried thyme 2 tbsp smoked paprika 1 tsp cayenne pepper 1 tsp dried oregano 1 tsp celery salt 2 tsp garlic powder 2 tsp onion powder 1 tsp ground pepper 1 tsp mustard powder 1/2 tsp ginger
Here’s how:
To pickle the onions, simply slice as thinly as possible and place in a bowl with the juice of one lime. Leave the onions to pickle for 20 minutes while you make the salmon. Mix all the seasoning ingredients together in a bowl. Place the salmon fillet into the seasoning and roll around to make sure the fish is evenly coated. I like to sit the fish into half of the seasoning and pour the rest over the top to get maximum flavour and coating onto the salmon. Lift the salmon out of the seasoning and place on a plate, giving it a shake as you transfer. Pour the remaining mixture into a resealable bag, label clearly and pop into the freezer for another day. Pour 1cm of vegetable oil into a frying pan and heat gently. When the oil is hot carefully place the fish into the pan and cook on both sides until golden and crisp, it should take about 3-4 minute on both sides. If you find that the salmon is cooking too quickly, just lift it out of the pan and cook it in the oven for 5-10 minutes at 170c. Serve the salmon on some warm soft tortillas spread with sour cream and topped with pea shoots, pickled onions and a squeeze of lime juice. Serve with a cool glass of beer Recipe by Peter Sidwell
