Beefsteak Club Winter Beef stew
Serves 4
Ingredients
1kg diced shin of beef
2 tbsp flour
Salt and pepper
2 tbsp olive oil
6 shallots peeled
4 carrots, peeled and cut into chunks
2 tbsp fresh thyme
1 bulb of garlic cut in half
300ml Beefsteak Club Malbec
1 pint of beef stock
Here’s how
Dust the beef in the flour and season with salt and pepper
Pour the oil into a shallow oven proof dish, then add the beef and cook until golden and brown.
Be brave and cook the beef to a dark brown colour as the darker the colour the bigger the flavour at the end.
Add the shallots, carrots and garlic.
Pour in the Beefsteak Club wine and bring up to the boil, then add the beef stock and fresh thyme.
Once boiling put a lid on it and simmer for 2 hours or put it into the oven at 160c for 3 hours.
You can also put it in the slow cooker on a high heat for 6 hours.
Lift the garlic out and leave to cool for 10 minutes before squeezing the garlic insides back into the stew for extra flavour.
Once cooked and the beef is tender, taste and season with a little salt and pepper.
