Dark Chocolate and Orange Shortbread

This shortbread recipe has served me well for many years. I discovered these biscuits in the French Alps while on a skiing holiday, I would buy one everyday while getting my daily breakfast crossiant and stuff it into my ski jacket for that welcome hit of sugar to keep me going up and down the mountain. In this recipe I have combined my personal favourite floors of chocolate and orange but you can make your own if you like.
Makes 10-12 biscuits
Ingredients
250g soft butter
125g golden caster sugar
1 egg yolk
1 tsp vanilla extract
2 orange zest
375g plain flour
100g dark chocolate chunks
Here's How
Mix the butter, sugar and vanilla together until light and fluffy
Add in the orange zest
Sieve in the flour and add the chocolate
Using a metal spoon flour the ingredients together, it's important it to mix the dough to much as over mixing will cause the flour to make the biscuits to become tough.
Transfer the dough to a clean work surface and roll into a sausage shape
Place the dough into the fridge to chill
When the shortbread is firm remove from the fridge and brush with the remaining egg white, then sprinkle with a little castor sugar
Cut the shortbread into 2cm slices and place on a non stick baking tray
Bake the biscuits in s pre heats over 160c for approximately 12 minutes
